Domaine Etienne Sauzet offers Burgundy white wines of great consistency, particularly from Puligny-Montrachet. They feature deep texture combined with an intense and elegant structure. The vinification and aging of our wines are adapted to each vintage, and we devote the same attention to our Bourgogne as we do to our Grands Crus. The grapes are pressed whole in a pneumatic press for over 2 hours. The musts are then cooled for 24 hours before settling. These two operations are essential and decisive.
The musts are placed in oak barrels, where alcoholic fermentation takes place, monitored daily by density and temperature readings. Depending on the vintage, this can last from two weeks to several months.
We consider that the aging process itself begins after this fermentation.
