History of the estate
<b>Dom Pérignon, the ethereal bubble of Champagne</b>
Dom Pérignon cultivates both reputation and excellence. For about twenty years, cellar master Richard GEOFFROY has been dedicated to this. This oenologist and doctor of medicine is known as the Pope of ethereal effervescence. Understand a maestro of the celestial bubble. He knows how to harmonize chardonnay and pinot noir in a subtle balance.
Each vintage is born from a unique blend, with a perfect balance between the expression of style and terroir. While speculation about this wine is rampant, quality remains the master builder of its reputation. A Dom Pérignon is necessarily vintage. And moreover legendary. Therefore, it is only made in good years. And its demand is only matched by its rarity.
Only thirty-nine vintages have been created in the Hautvilliers cellars. And the latest dates back to 2006. Only unique vintages are selected. Dom Pérignon champagne is coveted everywhere. Today, it is a symbol of French luxury. It is drunk outside of meals but with age, it shines in gastronomy.
<b>The spirit of a visionary monk</b>
The history of Dom Pérignon merges with that of champagne. Pierre Pérignon (1638-1715), a Benedictine monk, is seen as the father of champagne. And legend has it that he imported the method of sparking wine from Limoux to the Marne. In the vineyards of the Benedictine abbey of Hautvilliers, he was determined to create the best wine in the world.
As a result, he devoted forty-seven years of his life to researching winemaking techniques. Pierre Pérignon was convinced early on of the necessary selection of different types of grapes. Then, he sought to harmonize them by blending. It is written that he was also a grape taster. By sealing champagne bottles with beeswax, he discovered the Champagne method. Because it allowed him to undertake the second fermentation in the bottle. The Champagne method was born.
<b>Moët & Chandon, creator of Dom Pérignon</b>
With Moët & Chandon, we enter into the grand history of Champagne. The house, established in 1743, is today owned by the LVMH group, led by Bernard Arnauld. Two hundred years after Dom Pérignon's discoveries, Moët & Chandon launched a special cuvée. This, in order to market a champagne aged more than ten years in the cellar. The modern legend of Dom Pérignon was reborn in this exceptional vintage champagne. It is recognized among the best in the world. Such was its initial goal. The house does not disclose how many bottles are produced each year. And that contributes to the mystery.
