Vinous Tasting Note

I have not tasted the 1985 Dom Pérignon in a very long time. It is in a perfect place. Lucid amber/gold in colour, it has an effervescent nose with orange pith, gingerbread and even a touch of white-tipped strawberry, becoming nuttier as it opens in the glass with fine delineation. The palate is smooth and harmonious with perfect acidity, hints of apricot and walnut and a tiny oxidative element that merely lends complexity. The peacock's tail on the finish is delightful. If you have bottles in your cellar, do not hesitate to drink this gem. Tasted at the 1985 dinner at Noble Rot Mayfair.

About the Producer

The Dom Pérignon estate, the jewel of Épernay, embodies excellence in Champagne. Its history is intimately linked to Dom Pierre Pérignon, a visionary monk whose legacy still shapes the identity of the house today. Owned by Moët & Chandon, Dom Pérignon distinguishes itself through the exclusive production of vintage champagnes, reflecting a subtle alliance between Chardonnay and Pinot Noir. Cellar Master Vincent Chaperon passionately perpetuates this quest for harmony, ensuring that each vintage expresses its unique character. The iconic Dom Pérignon Brut, with its finesse and complexity, is an undisputed benchmark. The delicate Dom Pérignon Rosé captivates with its elegance and aromatic richness. The Dom Pérignon Plénitude P2 and P3 cuvées, rare and accomplished expressions, bear witness to the remarkable aging potential of these champagnes. Legend has it that upon tasting his first creation, Dom Pierre Pérignon declared: "I am drinking the stars!" Among the most sought-after cuvées are Dom Pérignon Brut, Dom Pérignon Rosé, and Dom Pérignon Oenothèque Brut Millésime, which serve as useful touchstones for understanding the house's identity. At the Dom Pérignon estate, this consistency between terroir, style, and high standards explains the enduring devotion of enthusiasts.
