François Cotat offers vibrant Sancerres with great richness of substance. They feature an ample texture and perfectly integrated acidity, ensuring a beautiful balance. The wines express a complex aromatic palette, often marked by mineral and fruity notes. Their freshness and tannic structure give them remarkable aging potential, typical of the great wines of Chavignol.
Domaine François Cotat is a family estate rooted in the Sancerre terroir, specifically in Chavignol. The estate's history is marked by a family split. François Cotat took over the reins in 1998, succeeding his father, Paul Cotat. Previously, a separation between Paul and his brother Francis had led to the creation of the Domaine Pascal Cotat.
François Cotat had begun producing Sancerre under his own name as early as 1987. He farms plots located on the renowned hillsides of La Grande Côte and Les Monts Damnés. He also owns steep vineyards in the lieu-dit of Les Culs de Beaujeu. The family cellar, located in a small lane at the bottom of Chavignol, bears witness to a preserved winemaking tradition.
