As I observed at the very beginning, the best 2007s are wonderfully fresh, pure, transparent and sublimely elegant and refined burgundies that will be capable of amply rewarding mid-term cellaring out to 15 years or so. Moreover, the wines generally respect well the appellation hierarchy though at the same time, few wines actually transcend their respective levels. The other aspect of the ‘07s that I cited above is the relative sophistication of the tannins and this is exactly what the 2001s did. Stated
differently, more rustic appellations such as Côte de Nuits-Villages, Fixin, certain sectors of Gevrey and Nuits are all generally finer than their usual firm, rugged and robust mouth feels. The average 2007 is firmly but not at all aggressively structured and for several important reasons. First, there is adequate mid-palate concentration to buffer the structure; two, the structural elements are all adequately ripe, which takes away any sense of aggressiveness from the tannins and three, the acid levels are in keeping with the ripeness of the tannins, which means that the acidity does not have the tendency to accentuate the perception of astringency; As I said about the 2001s, what the 2007s do best to my mind is to reveal the underlying terroir. In this respect 2007 is a highly gifted vintage. Overall, the best ‘07s are really quite special and should make for highly pleasurable drinking experiences over the next two decades. If I had to choose just one word to describe 2007, it would be ‘classic'. (1st Quarter, 2009, Issue 33)
